What’s it like?
The Tannery Cookery School is a clean brightly lit space that manages to be both chic and practical at the same time. Up to 30 guests can join for each cookery demonstration and 14 participants can partake of each cookery course. The small number allows for individual attention to be given to each student. Paul’s approach to running the cookery school is to keep things relaxed and informal while still instructive, and their enthusiasm for food and cookery would inspire anyone to take up a spatula!

The range of cookery courses is suitable for everyone, from the culinary novice to budding master chefs.
For home cooks lacking in confidence, the Seafood and Sauces course is designed to showcase how simple cooking with fish can be and how to create delicious creamy sauces to go alongside the seafood star of the show. Those looking to add some more exotic dishes to their cooking repertoire might enjoy the Middle Eastern Cookery course. Middle Eastern cuisine is becoming more and more popular with Turkish and Moroccan restaurants popping up all over the place. Now, these delicious, fragrant dishes can be served up at home. Then the Advanced Masterclass – the most popular of all the courses at the Tannery, is perfect for those looking to hone and fine-tune their culinary skills.
The Cookery School also welcomes corporate groups, hen and stag parties, private parties and more.

Hearty Wholesome Family Cooking – All Day Demo
September 7th 10 am to 4 pm
Do you feel like you are stuck in a cooking rut and constantly repeating the same recipes? Finding the inspiration for everyday recipes can be a challenge, as can finding a balance between what the kids like and what the adults want. This course will demonstrate tray bakes, slow-cooked casseroles, a beef rib Sunday lunch and the perfect Dauphinoise potatoes.
September 28th 10 am to 4 pm
Paul has spent the last 36 years cooking so he knows a thing or two! This is one of the most popular courses at the cookery school. Designed for proficient cooks who are looking to elevate their skills further, improve their home cooking and learn the secrets of the professional kitchen.
September 30th to October 2nd
The Tannery Cooking School's annual three-day intensive course, where Paul guides you through various disciplines of cooking in an intimate setting. For the competent home cook who wants to further their skills, or for those who want to take their cooking out of the home kitchen and into a more commercial area, such as small café. Paul will focus on how to make the best of seasonal ingredients and how to elevate simple dishes to make them restaurant quality. Secrets of the professional kitchen will be shared along with the recipes that can be adapted for the home.
Kitchen Confidential - The Insider Knowledge - Practical
October 5th 10 am to 4 pm
Learn the tricks that make a restaurant kitchen work and in doing that impress your friends with your insider knowledge. This one-day practical course with Paul will be an inspiring day of cooking for those who are already good home cooks and want to improve their skills.
October 19th 10 am to 4 pm
The perennial favourite Aga - October is here and it's time to crank up those Agas. This course is one of the most popular at the Cookery School every year. Helen Manning is now a familiar face to us as she assists Paul in the finer points of Aga cooking. From hearty stews and casseroles to baking and slow cooking, this is the course that shows you how to make the most of your Aga.
Cooking for Christmas - Morning Demo
November 9th 11 am to 2 pm
Cooking for Christmas doesn't just mean the traditional roast turkey. Why not shake things up a bit with this cookery course to make sure your Christmas spread is the envy of all your friends and family over the festive season. Learn how to cook Paul's favourite seasonal recipes, perfect for entertaining and also for your own family.
